Creamy Potato Soup

I'll be sharing one of our fave comfort soup...it's the CREAMY POTATO SOUP!!! I know this is not a healthy one but if you think of comfort food you'll never thought of the calories count.




Ingredients:

6 cups chicken broth
6 cups peeled and cubed potatoes
1/3 cup chopped white onion
salt & pepper to taste
1 tbsp. parsley
1 cup crumbled cooked bacon
12 ounces cream
2 tbsp. chopped spring onion

Procedure:

1. In a stockpot, bring the broth to a boil over high heat.
2. Add diced potatoes and onions and return to a boil.
3. Reduce heat to a simmer, partially cover and cook 20-25 minutes, until potatoes are tender.
4.Using a potato masher, coarsely mash the potatoes in the pot (do not drain).
5. Add seasonings, parsley, crumbled cooked bacon, and cream.
6. Cook and stir for a few minutes. Garnish with spring onion and crumbled bacon.
7 .Serve soup hot with a side salad and a crusty baguette.
