Lumpiang Sariwa

im been craving for this dish for so loooong...but just recently i'd got my guts to try. For the main reason that we just found out that hubby is diabetic at the same time he has a very high BP and cholesterol level, so ang lolo mo, need ng diet (btw, my hubby is certified carnivorous/carnivore..he hates all kind of leafy vege). Everyday is a task for me to serve delicious at the same time with accordance to his low carbo/low sodium/low fat diet. Let me share my recipe for my first ever fresh Lumpia.



For the Filing:

ground chicken
minced garlic & onion
carrot
cabbage
sweet potato
baguio/green beans
salt and pepper to taste
Romaine lettuce

1. Heat your pan with olive oil. When the pan is hot enough add in the ground chicken until it change it's color. Put in your onion and garlic. Saute well.
2. When the onions are translucent in color, it's the time for you to add in your carrots, cabbage, sweet potato and baguio beans. 
Note: No need to add water the vegetables will produce it's own water which is enough.
3. Seasoned with salt and pepper.

You may noticed the differ in color of my wrapper that is because i make three different kinds of wrapper.as i mentioned my hubby is diabetic that's why i preferred a special wrapper for him.

For the Wrapper:

Cornstarch Wrapper

1 cup cornstarch
1 1/2 cup water
1 tsp. vegetable oil
All purpose flour Wrapper

1 1/2 cup all purpose flour
3 pcs. egg
1 3/4 cup milk
salt
Low fat & Low Carbo Wrapper

1 1/2 cup Diabetic flour
3 pcs. egg
1 3/4 cup milk
salt
a dash of sugar

1. Mix all the ingredients.Make sure that everything is well corporated.
2. Heat a teflon pan and spray olive oil.
3.When the pan is heated enough put in your batter and spread it all over the surface of your pan. Your wrapper is cooked if it is no longer stick to the pan.

For the Sauce:

ground peanut
6 tbsp. cornstarch dissolved in 6 tbsp. of water
1 cup sugar
1/2 cup soy sauce
pepper

1. Mix all the ingredients except the dissolved cornstarch.
2. Simmer. Boil for 3-5 mins.
3. Add in the dissolved cornstarch..Mix well until the desired thickness.
