Rosa Mexicano 2

As I promised I need to go back to Rosa Mexicano to try their freshly made guacamole but I haven't expected that this will be so soon. We were in Mirdif City Center trying to catch a good deal when we decided to have dinner outside instead of cooking at home.

And since I have entertainer voucher for Rosa Mexicano this will not hurt my pocket. By the way, entertainer book/ voucher is a buy one take one deal in participating restaurants/ merchants. It's a little bit expensive but if you were like us who love to eat this is a very sulit sa sulit buy.

Rosa Mexicano is  eye catching to anyone. Very brilliant color of red, yellow and blue giving a purple shade I love. I can't get enough looking around it seems there was a lot of things happening.

Nice mat..nice plate..nice napkin..perfect color!!Purple
Even though the seats with beautiful backdrop of waterfall and butterflies are available we opted to seat  in the couch near to the entrance to give us a different experience of just looking at the waterfall while enjoying our mexican delight.

While we're browsing the menu our server suggested to try their guacamole  with unlimited chips and salsa and presto my answer is YES!!

The first thing came was the chips with salsa with our pitcher of peach iced tea and a bottled water. Both are so perfect the chips are warm and crispy with the no so sour salsa.

Moments later, a server came with a cart of avocados and chopped ingredients and just like most mexican restaurant did prepared it right before your eyes. How i feel like eating so healthy with this freshly mix of avocado, tomato, cilantro, jalapenos and onions.

We were still busy savoring our guacamole and chips when our main course arrived.

For hubby: Chicken Enchiladas. A famous swiss recipe from Mexico. Pulled chicken rolled in soft corn tortillas and topped with a tomatillo cream sauce. Served with their house rice and refried black beans.

What I love with mexican food aside from it's surely delicious is the use of vegetables and herbs. Usually hubby is not into leafy and onions and the like. But here he can eat it all!!

Pardon me for this I know it's not mexican food but I wanna try cheeseburger mexican style..what a scapegoat!!

For me: Cheeseburger. Grilled sirloin on a brioche bun with melted chihuahua cheese.Served with chipotle mayo and sweet potato fries.

This is thumbs up!!
Super moist burger and very delicious. Plus the sweet potato fries is winner as well. Both of us can't get enough of this.

Looking forward to another mexican indulgence.

Kaleidoscope at Atlantis The Palm, Dubai

How time flies!!!we're celebrating our 12th years of being together, our friends called it cheesssyy but who wouldn't cherish the date you will have your perfect match in this lifetime.

I want to have a short getaway but since I haven't planned it ahead of time we just decided to have a dinner date. And this time at the "Kaleidoscope" of Atlantis The Palm.

Kaleidoscope is a casual dining for the people who can't decide what to eat or simple want to have a taste of everything. It has open interactive  live cooking stations and wide range of food selections.

very charming piece at the reception
We had a reservation for 7:30 pm wherein tables are already busy. We just need to wait for a few minutes on the queue before we had our table and luckily the wait staff gave us a nice place away from childrens roaming around.

Upon entry this beautiful ice carved welcome us.

If you're looking for a more private and romantic place to dine Kaleidoscope is not a place for you and this is our honest mistake. Since there's a lot of diners it seems the huge place is not good enough plus childrens wore walking and running around, every now and then we're scared of bumping a child.

Each buffet was decorated based on what cuisine they served so just looking from a far will give you an idea where to go first.

Bread station which we snobbed heheheh

I love starting my plate with salad but I can't resist when I saw the conveyor of makis and sushis. And even though I'm a self confessed Maki addict I need to limit by taking 2 pcs  :) I need to save more space for other goodies.

After our salad we proceed to our most favorite - the Chinese cuisine!!

How I love this station!! A create your own bowl. Choices from kind of noodles, meat, vegetables and soup stock.

Yummy bowl of noodles and prawn crackers
my second plate of chinese cuisine: still prawn crackers, dim sum, chicken bun

Beautifully arrange stations.

The dessert station is the star of the night it was beautifully arranged and surrounded with the cuisine buffet. There were choices of cakes, ice cream, chocolate fondue and candies. From Arabic sweets to English sweets you can have it all.

My plate of yummy sweets.

We were enjoying our desserts when our anniversary came arrived.

Thumbs up for the food in Kaleidoscope we enjoyed our around the world food experience.

Price: 200 AED for the International Buffet excluding drinks

Cassava Cake Recipe

Cassava or Kamoteng kahoy is one of the cheapest thing you get in the Philippines. And most of the time you can see it in cake form already. Cassava cake is a classic Filipino dessert that I truly love and why not its sweet, cheesy and soft - who would not fall in love with this little filling dessert?!

I have been using this recipe for years for family consumption and for my some homemade goodies business.

I love it hot with a lot of cheese on top.

Ingredients:

1 kilo of grated cassava
2 cans coconut milk
1 can evaporated milk
1 can condensed milk
1 tsp. vanila
1 cup brown sugar
1/2 cup melted butter
1 cup grated cheese
2 pcs egg
a pinch of salt

Toppings:
1 or 2 bottle of macapuno
1 can coconut cream
1 can condensed milk
2 tbsp. flour
grated cheese (optional)

Procedure

1. Pre-heat you oven to 350 degrees Fahrenheit for 20 minutes.

2. Combine all the ingredients in a big container and mix thoroughly.Set aside.

3. Grease the baking tray using a butter then pour in the batter.

4. Bake the batter for 15 minutes then do the toothpick test. Insert the toothpick at the center of the cake once the toothpick is clean when taken out it's done.

5. For the toppings, dissolved flour in the condensed milk in a pot then add coconut milk/cream.

6. Once the cake is cooked. Take it out from the oven and top with macapuno and the milk and coconut milk mixture.

7. Baked for another 20 minutes or until top turns golden brown.

8. Garnish with cheese on top and serve.

HAPPY EATING!

Dinner @ Rosa Mexicano

I'm so in love with Mexican food from tacos, tortilla chips, burritos, Enchiladas, flautas, salsa and off course guacamole - nothing beats a freshly made guacamole. As a matter of fact most of the Mexican dining offers an on the spot making of guacamole which includes Rosa Mexicano.

We wore strolling around the Mirdif City Center when we decided to have a light and early dinner in Rosa Mexicano. The place is huge and very lovely with perfect lightning effects.

And look at the backdrop behind me..isn't beautiful??!! When I saw this I immediately ask the waitstaff to have a table in this area. It so lovely!!!I can't get enough of this hahahha

Just like the other mexican diners the house specialty is guacamole. But since it's just the two of us we skip this and have Tres sampler instead it consist of empanada, flautas and chicken wings with 3 different dips. And ohhh how I love the mango salsa!!

For the main course hubby had Mix (beef, chicken, shrimp) Fajitas.

A pitcher of Iced tea for us

Before they serve our orders on the house chips with salsa came.

What i love in mexican food is aside from eating you need to assemble what you will eat.
busy making my fajita

Even though we didn't ordered for a fresh guacamole I have a shot of the guy making it on the spot.

I promise I will try this soon!!

Rosa Mexicano's food is sooooo good with fresh ingredients and huge servings. Plus a beautiful place to dine.

Before going out of the place and to feel the mexican theme. This is a MUST!!
